Super Easy Adzuki amd Coconut Brownie
I do so love a good brownie. It is something that I experiment with and make as a treat more than anything else. This recipe is so quick to make, totally delicious and very nutritious.
Adzuki beans are one of the most nutrient dense foods on the planet. They are loaded with antioxidants, high in protein and fiber and dense in minerals and b vitamins. In other words, great for your body and skin! They also keep you feeling full longer which means they are also great for your waistline. Win win..
These delicious brownies are packed with antioxidants and good fats so are definitely a super skin food! I try to use as many organic ingredients as possible.
RECIPE INGREDIENTS
250gm Adzuki beans soaked over night and then cooked until soft or 1 strained can of organic adzuki beans strained.
30gm cocao powder.
50gm of either almond or macadamia meal or hemp seeds. Or a mix.
50gm shredded coconut.
50gm coconut oil or macadamia oil.
1 Tsp vanilla powder or 2 Tsp vanilla extract.
1/2 Tsp baking powder.
1/2 Tsp Himalayan salt.
120gm pure maple syrup.
Chopped nuts for the top
METHOD
Preheat oven to 180. Line a small lamination tin with baking paper.
If you have a thermomix, mix everything (except the nuts although you can add some to the recipe if you want) on speed 5 for 30 seconds. Repeat if not smooth. If you have a blender, blend until smooth.
Pour into tin and sprinkle nuts on top. Cook for about 1/2 an hour or until a skewer comes out clean. Check after 20 minutes.
Let cool then cut into squares. Enjoy !
