
These nutritious hemp & coconut breakfast cookies have been on my must create recipe list for the longest time, so I’m excited to share these low sugar, nourishing breakfast bites on my Super Skin Food Blog which is all about nourishing your skin from the inside out! Yes, you can feel good about eating cookies for a first meal of the day because these made with wholesome ingredients like super nutritious hemp seeds, tasty shredded coconut and coconut oil, which is full off good fats which benefit your skin. Hemp seeds are low carb, an excellent source of plant protein, nutrient dense with omega-3 essential fatty acids, iron, vitamin E and GLA (gamma-linolenic acid), an Omega-6 fatty acid. One of the superfoods! For those who don’t know much about hemp seeds, they’d don’t contain THC, only the leaves of the plant contain this chemical. Being a breakfast biscuit I also like to put a good protein powder in this recipe. I use Nutra Organics Hemp Protein Vegan Collagen Glow powder. This is what I use in my morning smoothies as well.

Chewy and satisfying breakfast cookies are the perfect grab and go nutritious breakfast.
INGREDIENTS
1/3 cup hemp seeds
1/2 cup shredded coconut, unsweetened
3 large eggs (3/4 cup apple sauce or mashed banana for vegan option)
1/4 cup coconut flour or almond meal or mix both
1/4 cup coconut oil melted
1tsp Cinnamon optional
1/3 cup walnuts or pecans, chopped optional
Pinch himalayan salt
1/4 cup pure maple syrup
1/4 cup good protein powder
goji berries, cranberries or dried blueberries optional
If it seems a bit dry, add a bit of water or coconut mylk.
Form into cookies and place on cookie sheet. Note: with coconut flour, your cookies will not spread or flatten, so if you make them into balls you need to flatten them into the shape in which you want them to end up! Bake for 15 minutes at 180 degrees. I made 15 cookies, but it will all depend on what size you make them!
