GF Anzac Bikkies

Gluten Free and Refined Sugar Free

I know that Anzac Day has passed but it inspired me to share my healthy GF and refined sugar free Anzac Biscuit recipe which I have been making for years. This recipe is so simple to make, nutritious and makes a great lunch box filer or even a breakfast snack.

Pure oats are gluten–free and safe for most people with gluten intolerance. However, oats are often contaminated with gluten because they may be processed in the same facilities as gluten-containing grains like wheat, rye, and barley. If you can, try to get your hands on some gluten free oats.  I get mine from the whole food place in town but you can get them from health food shops as well. 

If you can tolerate oats then Organic ones are the next best option. 

Oats are among the healthiest grains on earth. They’re a whole grain and a great source of important vitamins, minerals, fiber and antioxidants. Studies show that oats and oatmeal have many health benefits. These include weight loss, lower blood sugar levels and a reduced risk of heart disease.

The other main ingredient in these bikkies is coconut, both the oil and dried coconut. Whether you eat it or apply it on your face and body, coconut cream, water and oil will help you attain that healthy, clean and glowing skin we all want. It’s naturally anti-bacterial, anti-fungal and moisturizing. Coconut oil is composed primarily of nourishing fatty acids and is especially high in lauric acid. It also contains vitamin E and healthy fats, which help to make skin smooth.

RECIPE

1 Cup rolled oats

1 Cup shredded or desiccated organic coconut

1 Cup GF Flour or 1/2 GF 1/2 Buckwheat flour

75ml Coconut Oil

1/4 cup Rice malt syrup or 2 Tbsp Raw Honey

1 tsp Bi carb

2 Tbsp hot water

*Add some dried fruit and seeds to make more brekkie like biscuits

METHOD

  1. Preheat oven to 170 degrees. Line two trays with baking paper
  2. Put oats, flour and coconut into a bowl and stir to combine
  3. Pour rice malt syrup or honey and coconut oil into a saucepan and gently warm over low heat and stir until combined and melted. Combine the bicarb soda with the water and then add to the heated mixture. Pour into the oat mixture and mix until well combined. 
  4. Spoon tablespoonfuls of the mix onto trays and flatten slightly with a spoon. 
  5. Bake for about 15 minutes or until golden. 
  6. Enjoy
