Easy healthy choc cake
Here’s my favourite recipe for a delicious one bowl chocolate cake that is full of superfoods and antioxidants. The recipe is something i’ve been working on for my low estrogen eating cookbook and can be enjoyed by everyone – whether you’re gluten free, dairy free, paleo or just love eating chocolate, this cake is for you! If you are vegan, you could substitute eggs for flax eggs or apple and bi-carb mix.
It is the perfect healthy cake for birthdays or any special occasion or simply as a delicious treat 🍫
What’s in it and why it’s great for your skin..
*Cocao is full of antioxidants and coconut is rich in fatty acids, vitamin E and proteins all which help in repairing damage to your skin therefore keeping your skin smooth.
*Cacao is the purest form of chocolate you can consume, which means it is raw and much less processed than cocoa powder or chocolate bars. Cacao is thought to be the highest source of antioxidants of all foods and the highest source of magnesium of all foods. It has been used throughout many cultures for years for health purposes.
*This cake uses buckwheat which is actually a fruit seed, therefore gluten free. It is also a source of good carbs, low GI and B vitamin and mineral rich. The other great thing about buckwheat is that is high in rutin, a bioflavonoid which is very anti inflammatory and helps to aid against sun damage to your skin and blocks free radicals that prematurely age your skin. I like to think of buckwheat as being one of those foods that is so good for your insides, that it also is also beneficial for outside too!.
*Maple syrup contains all important anitoxidants like zinc (important new cell production and the function of cell membranes) and manganese ( which aids in detoxification of superoxide free radicals.)
*Cashew nuts are known as acne-fighting nutrients. These nuts are high in selenium, which acts as an antioxidant with vitamin E, leaving a hydrated skin and reduced inflammation. The presence of zinc promotes immune function for healing and cell growth that can renew and replenish infected or damaged acne zones.
*Coconut is something thats better to put in your body to benefit your skin rather than applying it topically as it can easy clog pores and cause dryness. Cytokinins, kinetin and trans-zeatin present in coconut have anti thrombotic, anti-carcinogenic and anti-ageing effects on the body. Eating coconut regularly boosts oxygen in the skin and promotes blood circulation. Our cells need adequate amount of oxygen which can only be made possible by proper circulation in the body that carries oxygen. This allows proper breathing of the skin and promotes healthy and flawless complexion.
*Hemp Seeds The oil in hemp seeds contains high levels of omega-3 and omega-6 essential fatty acids that are vital for boosting brain function and healthy skin. In terms of natural skin care, hemp seed oils unique combination of healthy fats, antioxidants and antibacterial properties puts it in a league of its own. We use hemp seed oil in our Nourish oil, Glow Priming day lotion and rich Antioxidant Night Cream.
Now that I’ve covered some of the star ingredients and why they are beneficial to your skins health, here’s the recipe for both the cake and the frosting.
Chocolate Cake Recipe
120gm virgin coconut oil
2 organic free range eggs
100gm coconut yogurt (or nut mylk, I do prefer yogurt though)
1tsp vanilla extract
80gm coconut sugar
130gm buckwheat flour
30gm cocao powder (different to cocoa powder, more nutritious)
60gm shredded coconut (optional)
3tsp baking powder (aluminium free is best)
50gm hemp seeds (optional but I add them to everything!)
- Line a loaf pan with baking paper and preheat oven to 180 degrees celcius
- Mix all ingredients in a thermomix for 20 seconds Speed 5 or in a food processor.
- Cook for approx 35-35 minutes until a skewer comes out clean
- Let cool completely before adding frosting.
Fudgy Cashew Frosting
80gms raw cashews
6 Pitted medajool dates
1tsp vanilla extract
1/2 cup coconut cream
3Tbl cocao powder
Pinch of himalayan salt
1Tbl maple syrup
1. Soak cashews & medajool dates in boiling water for 15 minutes
2. Blend all ingredients in a smoothie maker like a ninja bullet until smooth (I find one of these works best to get it smooth quickly)
3. when the cake is cool, spread over cake and ENJOY!!
