Pesto is such a versatile sauce to have in your fridge, you can use it mixed with coconut kefir yogurt as a dip, smear it on my super quick buckwheat pizza base or simply toss it through your favourite pasta as I have done here. You can make it vegan by using nutritious yeast or the traditional way by adding a handful of Parmesan either grated or chopped fine and added at the end.
You may notice that I have also added avocado which is very unusual in a pesto. This lends it an added creaminess as well as the added nourishing benefits that avocado provides for your body and skin.
Basil & Kale Pesto Recipe
Good handful of basil leaves
Good handful of chopped kale
Small clove garlic
1/2 lemon juiced
1/2 small avocado
About 1/3 cup of extra virgin olive oil. May need more to make it mix easily.
Salt & pepper
Small handful cashews or some other nut
Parmesan or nutritious yeast optional
Blend everything except nuts in a nutri bullet or some such thing until smooth. May need to increase recipe to use a thermomix or food processor effectively.
Add nuts and Parmesan or nutritious yeast if u are using it at the end a blitz for a few seconds a few times.
Use as a dip or as a pizza or pasta sauce 💚
